Step 1

We heat the milk to a temperature of 35-40 degrees. Add 1 teaspoon of sugar and 20 g of yeast. Mix and place in a warm place for 10-15 minutes - until bubbles appear. The quantity is indicated for fresh yeast, dry yeast should be taken about 3 times less, that is, 6-7 g.

Melt the butter in a water bath, then let it cool to room temperature.

Beat the eggs, adding the remaining granulated sugar, vanilla sugar, milk, melted butter, yeast and salt. It is best to beat with a mixer until smooth. Then, continuing to beat, add the sifted flour in small portions. Knead soft, plastic dough without excess flour. We send it in a sealed container to a warm place for an hour and a half.

Step 4

Knead the matched dough with your hands until smooth and leave for another 20 minutes to rise. Then we roll it out to a thickness of about 2 cm. Using a mold or glass, we cut out round cakes from the layer. We leave them for 30-40 minutes so that they rise a little more.

After that, you can start frying donuts. If frying in a deep fat fryer, set the temperature to 180 degrees. But donuts turn out great in a regular frying pan with high sides. The height of the oil layer should be 2-4 cm. The oil should be heated to an average temperature (170-190 degrees). Oil that is too hot can burn the donuts on the outside and leave them soggy on the inside. If the oil, on the other hand, is not hot enough, the donuts will cook slowly and absorb too much fat.

Fry donuts on both sides for 2-3 minutes until golden brown. Better to fry under the lid. Put the finished donuts on a paper towel to get rid of excess fat. Then, having made a hole on the side, we fill with jam using a pastry syringe. The filling can be not only jam, but also any other - boiled condensed milk, custard, chocolate paste, etc. will do. After filling the donuts, sprinkle them with powdered sugar on both sides.
