  • Ukrainian yogurt flatbread:
  • - 2 cups of flour;
  • - 210 ml of kefir (not very fatty);
  • - salt according to your taste.
  • Onion cake with kefir (garlic):
  • - 1 liter of kefir;
  • - 3 tsp yeast;
  • - 950 ml flour (approximately 7 glasses);
  • - 60 ml of vegetable oil (for the test);
  • - 2 tsp granulated sugar;
  • - 2 tsp salt;
  • - 4 tbsp. l. onion soup (2 packets) or 4 tsp. garlic powder;
  • - some vegetable oil for greasing the cakes.
  • Kefir flatbread with cheese and herbs:
  • - 540 g flour;
  • - 2 chicken yolks;
  • - 4 tbsp. l. vegetable oil;
  • - 270 ml of kefir;
  • - 1 tsp. salt.
  • For filling:
  • - 120 g feta cheese;
  • - 120 g of hard cheese;
  • - 15 tsp ketchup;
  • - a small bunch of dill;
  • - some lettuce leaves.
  • Flatbread on kefir "Derevenskaya":
  • - 1, 5 glasses of kefir;
  • - 135 g melted margarine;
  • - 2 tsp granulated sugar;
  • - 3 tbsp. flour;
  • - 1 tsp. soda;
  • - 1 tsp. salt.
  • Filling:
  • - potatoes with various additives;
  • - stewed mushrooms;
  • - sausage;
  • - stewed cabbage;
  • - ham.

Step 1

To make a Ukrainian-style yogurt cake, gently sift the flour, transfer it to a deep plate and make a small hole in it. Pour kefir into it, add salt and soda. Then knead to a tight dough. Cover it with a lid and let sit for about 35 minutes. Put some vegetable oil on a special cutting board, put the dough and form a cake with a thickness of 1.5-2 cm. Heat a pan, place the cake on it, fry on low heat for 15 minutes. Place it on a flat plate to cool slightly.

To make onion or garlic tortillas, dilute granulated sugar, onion soup (or garlic powder) and yeast in heated kefir. Then add a small amount of flour, mix well. Let the dough sit for 7 minutes. Salt it, add the remaining flour, add vegetable oil, gently knead the dough. Form a ball from it, grease it with vegetable oil. Then put it in a separate bowl, cover with a small towel, leave for 2, 5 hours. Then divide it into 7 parts, roll each into a small ball. Then knead them well with your hands until a cake forms. Place everything on a baking sheet covered with parchment paper. Coat the cakes with vegetable oil, leave them for 25 minutes. Bake the food in the oven at 190 ° C for about 17 minutes.

You can make a tortilla with cheese and aromatic herbs as follows. In a deep bowl, combine kefir, chicken yolks, vegetable oil and a little salt. Add flour, knead the dough. Cover it with plastic wrap and leave for 45 minutes. Then divide the dough into 15 pieces. Sprinkle each with flour, roll out to a small cake. Put on a baking sheet, put one spoonful of ketchup on each, spreading it over the entire surface. Chop the feta cheese finely and chop the dill greens. Then put it all on a cake. Rub the cheese on a medium grater and sprinkle on the dish. Preheat the oven to 190 ° C, bake the tortillas until golden brown. Place the finished dish on the lettuce leaves.

To prepare "Village" cakes, mix soda, granulated sugar and kefir in a saucepan. Pour in melted margarine. Sift flour and add salt to it. Pour the liquid mass into flour, knead the dough. Leave it on for 10 minutes. Then divide into three parts. Grease a frying pan with oil, heat it up and place the first part of the dough there. Smooth it over the entire surface to make a flat cake. Put the filling in the very middle. As it you can use potatoes with cottage cheese, stewed cabbage, stewed mushrooms, ham. Fold the edges of the dough up and pinch. Fry the first tortilla over low heat. Do the same with the other parts. Place ready-made tortillas on a platter and cover with a deep plate for 15 minutes. Then serve.
