Pumpkin is often used in soups. Due to its pulp, the dish becomes tender and very bright. To surprise guests with something new and original, you can cook pumpkin soup with chickpeas and shrimps.
It is necessary
- Ingredients for 4 servings:
- - pumpkin pulp and fresh shrimp - 400 g each;
- - canned or boiled chickpeas - 400 g;
- - salt, nutmeg and white pepper;
- - 2 cloves of garlic;
- - a couple of sprigs of rosemary;
- - 3 tablespoons of olive oil.
Instructions
Step 1
Cut the pumpkin into small cubes. Heat olive oil in a saucepan with a thick bottom, fry peeled and chopped garlic cloves, whole sprigs of rosemary and pumpkin for 5-7 minutes. Add chickpeas, leaving part to decorate the finished dish, pour in 1 liter of boiling water and cook under a closed lid for 10 minutes.
Step 2
Remove the rosemary from the pan, season the broth with salt, ground white pepper and nutmeg to taste. Using an immersion blender, we bring the soup to a puree state.
Step 3
The shrimp for the recipe must be fresh, so that they have the maximum aroma and taste. We clean the shrimp, make an incision in the back and remove the intestinal vein (a strip of dark or black color). Boil the shrimp for 3-4 minutes (you can cook in a saucepan with a little water).
Step 4
We pour the soup into pre-warmed plates, decorate with the remaining chickpeas, shrimps and, if desired, a small amount of grated cheese, immediately serve a fragrant, mouth-watering and bright soup on the table!
