These delicious Peking cabbage rolls with rice can compete with the usual stuffed cabbage rolls.

It is necessary

  • Serves 4:
  • - 250 g of long grain rice;
  • - 2 liters of water;
  • - 12 sheets of Chinese cabbage;
  • - 2 sprigs of basil;
  • - 250 g of cucumbers;
  • - 10 pitted olives;
  • - 80 g feta cheese;
  • - 150 g of natural yogurt;
  • - juice of 1 lemon;
  • - 3 tbsp. l. olive oil;
  • - 1 tsp honey;
  • - salt.

Instructions

Step 1

Rinse the rice and boil it in 1 liter of salted water until tender, about 20 minutes. Place the rice in a colander, pour into a bowl and cool.

Step 2

In another saucepan, also boil 1 liter of salted water. Cut the coarse veins from the cabbage and blanch it for 1 minute. Use a slotted spoon to remove the leaves and dip them in cold water. Discard the cabbage in a colander.

Step 3

Wash the basil and cut into thin slices. Cut the cucumber in half, remove the seeds with a teaspoon, cut the pulp lengthwise into narrow strips.

Step 4

Finely chop the olives and feta. Mix rice with yogurt and basil.

Step 5

Spread some rice on top of the cabbage leaves, flatten and make indentations in the middle. Spread the cucumber, olives and feta over them. Roll each sheet into a roll.

Step 6

Mix lemon juice with honey, olive oil and salt.

Step 7

Cut the cabbage rolls into slices. Serve with honey and lemon sauce.
