Airfryer baked mackerel

Ingredients:

- 1 gutted mackerel weighing 600 g;

- 2 onions;

- a quarter of a lemon;

- 40 g of butter;

- 3 sprigs of dill;

- 1/3 tsp each dried rosemary, thyme and white pepper;

- salt;

- 1 tbsp. vegetable oil.

Wash the mackerel thoroughly and pat dry. Rub it with salt, rosemary, thyme and pepper and drizzle with lemon juice. Spread out a double sheet of foil, moisten it with vegetable oil and place the fish in the center. Peel the onion and cut into thin rings. Chop the dill finely. Spread the sliced vegetables and herbs evenly over the prepared carcass. Pour melted butter over everything, wrap it tightly and transfer to the grill. Bake the dish for 35 minutes at 235oC and medium speed.

Smoked mackerel in the airfryer

Ingredients:

- 3 gutted mackerels with a total weight of 2 kg;

- 1 lemon;

- salt;

- vegetable oil;

- liquid smoke;

- wood shavings.

Rinse the fish well, let it dry and season with salt on both sides. Cut the lemon in half and squeeze the juice directly onto the mackerel. Leave them to marinate for half an hour, tightening the dishes with cling film or closing the lid. Place wood shavings on the bottom of the airfryer container. Lightly smudge the carcasses with liquid smoke using a cooking brush and transfer to a wire rack. Set the temperature to 180oC and low fan speed and cook for 25 minutes. Then brush the fish with vegetable oil and smoke for another 5 minutes. Serve hot or cold.

Mackerel rolls in aero grill

Ingredients:

- 2 small mackerels;

- 250 g of small shrimps;

- 60 g of hard cheese and butter;

- 3 cloves of garlic;

- 1, 5 tbsp. lemon juice;

- 3/4 tsp ground black pepper;

- salt;

- 10 g of parsley.

Gut the mackerel, cut off the heads and tails. Cut along the spine of the carcasses and cut off 4 fillets. Combine lemon juice, pepper and 3/4 teaspoon salt and rub mackerel with this mixture. Soak it for 15-20 minutes.

Boil and peel the shrimp. Grate hard cheese on a coarse grater. Melt the butter in the microwave or water bath. Crush the peeled cloves of garlic in a special press, chop the parsley. Combine all the ingredients of the filling, add salt to taste and spread over the fillet. Roll them into rolls, secure with toothpicks and place on a wire rack. Roast them in the airfryer for 35 minutes at 200oC and maximum speed.
