American-style lush and crumbly pancakes with caramelized bananas are the perfect start to the day!
It is necessary
- For 1 serving:
- - 2 large ripe bananas;
- - 1 tbsp. icing sugar;
- - 25 g unsalted butter;
- - 0.5 tsp rum;
- - 1 tbsp. water.
- For pancakes:
- - 2 tbsp. flour;
- - 0.5 tsp baking powder;
- - a pinch of fine sea salt;
- - 40 ml buttermilk;
- - 25 ml of cold water;
- - 1 egg.
- - vegetable oil for greasing the pan.
Instructions
Step 1
Sift baking powder and salt with flour. Make a depression in the middle and break the egg there. Combine buttermilk and water, pour over eggs and flour and mix everything into a homogeneous mass without lumps.
Step 2
Preheat a greased frying pan. Bake pancakes for 1.5 minutes on each side.
Step 3
Let's tackle the caramelized bananas. Melt sugar in a frying pan over medium heat. Once the sugar has melted, turn the heat up to high and cook until caramel is golden brown. Then remove the pan from the heat, add oil and bananas cut into slices (such a cut will allow them to keep their shape).
Step 4
Rotate the pan so that the bananas are evenly caramelized. Cook in this way for about 2 minutes. Then we add rum and light it - so only the aroma will remain from the alcohol. Pour some water into the pan to make the caramel thinner. Serve the banana pancakes with the remaining caramel in the pan.
