  • - chicken eggs of medium size 4 pcs
  • - granulated sugar 300 g
  • - wheat flour 200 g
  • - butter 73% fat 80 g
  • - cocoa 3 tablespoons
  • - chocolate 60 g
  • - sour cream 20% fat 3-4 tablespoons
  • - baking powder 2 teaspoons
  • For fondant:
  • - granulated sugar 300 g
  • - water 4 tablespoons
  • - chicken egg white 1 pc

Instructions

Step 1

Separate the chicken whites from the yolks. Place the yolks in a container and, gradually adding sugar, beat until it is completely dissolved. Beat the cooled proteins for about 10 minutes with a pinch of salt until they become thick enough and snow-white.

Sprinkle baking powder into wheat flour and mix. After that, sift the flour through a sieve so that the baking powder is evenly distributed, which will have a beneficial effect on increasing the cake when baking.

Step 3

Pour melted butter and sour cream into a mixture of yolks and sugar. Mix well and add flour and baking powder. Beat the resulting mass slightly using a whisk.

Step 4

Add proteins last. Gently mix from top to bottom so that the proteins do not settle.

Grate the chocolate.

Divide the dough into two parts, in one of which add cocoa and grated chocolate.

Step 7

Put the paper soaked in butter into the cake pan and pour in the light dough, in the center of which put the dough with cocoa and chocolate with a teaspoon.

Preheat the oven to 180 ° C, place the cake in it and bake until tender for 45 minutes.

Step 9

Prepare the fondant. To do this, boil water, pour a glass of sugar into it and cook over low heat until the mixture thickens slightly. Cool the syrup.

Step 10

Beat the chicken protein separately, then mix with the sugar syrup and beat again using a mixer.

Anoint a cupcake with cooked fondant. Sprinkle with coconut if desired.
