It is necessary
- - 1 carcass of a rabbit
- - 200 g fresh champignons
- - 100 g bacon
- - 6 medium onions
- - 3-4 cloves of garlic
- - 7 tablespoons of vegetable oil
- - a bunch of parsley
- - 2 tbsp. tomato paste
- - 1 glass of dry white wine
Instructions
Step 1
Wash and dry a rabbit carcass weighing about 1 kg, cut the rabbit into portions, removing films and tendons. Cut the bacon into slices and fry for 2-3 minutes in preheated vegetable oil. Chop 3 onions, 3-4 garlic cloves and parsley.
Step 2
Put prepared pieces of rabbit and prepared onions, parsley and garlic on bacon, fry for one minute. Pour white wine over the rabbit (if there is not enough liquid, you can add water), put 3 whole onions on top and simmer for 1 hour. Then remove the whole onions.
Step 3
While the rabbit is stewing, cut the mushrooms into thin slices. Dilute the tomato paste with 4 tablespoons of broth from a saucepan with a rabbit. After one hour of braising the rabbit, add mushrooms and tomato paste to the pan. Simmer for another 20 minutes until cooked through. Serve the rabbit in the sauce it was cooked in.
