It is necessary

  • - meat set for jellied meat (1-2 kg);
  • - onion (1 piece);
  • - carrots (1pc);
  • - garlic (4 cloves);
  • - bay leaf (3 leaves);
  • - table horseradish (50 g);
  • - peppercorns (5-10 pcs).

Step 1

To prepare rich tasty meat jellied meat, it is best to take ready-made pork or beef sets. This usually includes: an ear, a leg or other parts of the carcass with bones and joints that give the broth the "jelly" needed for the dish.

I must say that you will not be able to cook jellied meat very quickly, because you need to cook a set for jellied meat for at least 5 hours.

So, place all the meat pieces in a large saucepan, cover with cold water so that it completely covers the ingredients, plus 4-5 cm. Bring the broth to a boil, skimming off the unnecessary foam that forms.

Step 2

Peel the onions, garlic and carrots and put them in a saucepan. Put the bay leaf, peppercorns and the necessary seasonings (to taste) there. Now close the pot with a lid and cook the contents for at least 5 hours (preferably 6-8).

Step 3

When the cooking time comes to an end, remove all the meat parts from the broth and leave to cool. Salt the broth, strain and leave to infuse.

Step 4

Separate meat from bones and joints, cartilage. You can throw these parts, which are no longer needed, or give them to animals, because they have fulfilled their role in the preparation of jellied meat.

Step 5

Put a layer of meat on the bottom of the container, which will serve as a form for the jellied meat. Pour in the clear meat broth in a thin stream.

Step 6

The jellied meat is almost ready. Now he needs to cool down. To do this, put the form with jellied meat in a cold place for 4 hours. After the expiration of time, the meat jelly can be served at the table. Serve jellied meat with horseradish or mustard.
