Mushroom caviar is a versatile dish that can be served with bread, pancakes or croutons. The mixture is ideal for filling tartlets or sauce for almost any main course.
It is necessary
- - 1 large carrot
- - 3 heads of onions
- - 400 g dried mushrooms
- - 3 eggs
- - salt
- - ground black pepper
- - vegetable oil
Instructions
Step 1
Boil the eggs and chop them thoroughly. Boil the dried mushrooms in slightly salted water for a few minutes, then transfer to a separate bowl and cover with warm water. Mushrooms must stay in this state for at least one hour.
Step 2
Grate the carrots on a fine grater, chop the onion, fry the ingredients in vegetable oil until golden brown. For piquancy, you can add a few minced garlic cloves.
Step 3
Remove the mushrooms from the water and cut into small pieces. Combine the piece with the roast and cook over low heat for another 5-8 minutes.
Step 4
Grind the resulting mixture with a blender, adding boiled eggs. Add salt and black pepper as you like. Garnish with parsley sprigs before serving.
