Preparation

Boil cauliflower in salted water, over medium heat for 30 minutes, drain in a colander to glass the water, cool and divide into inflorescences. Place all inflorescences on a paper towel.

Rub cauliflower through a sieve and place in a saucepan and put on fire to evaporate the liquid. Then start making béchamel sauce, for this you need half a liter of milk, mix it with butter (30 gr.) And 30 gr. flour, add the grated nut and boil for at least fifteen minutes over low heat, stirring with a spoon. Once the sauce is thick, remove from heat.

Then cool and mix it with the mashed cauliflower. Add 3 yolks, mix well. Whisk the egg whites into a thick foam, add the sauce you prepared in advance and place in an already greased mold. Preheat the oven to over 160 degrees and place the entire contents in a water bath for 40 minutes. Once the pudding is ready, you can remove it from the oven. Wait for it to cool down. Then you can remove it from the form. Prepare the béchamel sauce from the remaining flour, butter and milk. Put the finished pudding on a plate and pour over the sauce, garnish and serve.
