Cut the eggplants lengthwise into plates 3-5 mm thick, salt and leave for 30 minutes.

At this time, finely chop the tomatoes and finely grate the carrots. Fry vegetables in vegetable oil, then cool.

Cut the ham into cubes.

Fry the eggplants on both sides until golden brown. We spread them on a paper towel and blot them to remove excess fat (eggplants strongly absorb oil during frying).

We spread the vegetable filling on the eggplant, on top - the ham. We turn into a roll.

Before serving the dish, sprinkle with herbs and finely chopped garlic.
