  • Horseradish seasoning:
  • - 1 kg of horseradish;
  • - 500 ml of beet juice;
  • - 250 ml of 9% vinegar;
  • - 100 g of sugar;
  • - 50 g of salt.
  • Garlic seasoning:
  • - 500 g of garlic;
  • - 125 g of sunflower oil;
  • - 25 g of red ground pepper;
  • - 25 g of black ground pepper.
  • Gooseberry seasoning:
  • - 1 kg of gooseberries;
  • - 250 g of dill;
  • - 300 g of garlic.

Instructions

Step 1

Horseradish seasoning

Peel raw red beets, rinse well. Grate the beets on a fine grater and squeeze the juice through cheesecloth. You can also get beet juice using a juicer.

Step 2

Peel the horseradish root, rinse it under cold running water, then grate on a fine grater.

Step 3

Dissolve granulated sugar and salt in beetroot juice. Add vinegar to the mixture, mix everything well.

Step 4

Combine horseradish and beetroot juice, stir and place in glass jars. Close the jars with nylon lids and store the seasoning in the refrigerator. Use it to taste with first and second courses, cold cuts, salted lard, jellied meat.

Step 5

Garlic seasoning

Peel the garlic, wash it in cold water and place in a colander. Once the water is drained, finely grate the garlic or pass it through a garlic press.

Step 6

Heat the sunflower oil until a slight haze appears. Remove from heat and let cool slightly. Pour the garlic with hot oil. Quickly stir in the oil and garlic and cool to room temperature.

Step 7

Sprinkle the garlic with red and black pepper evenly, mix everything well. Delicious, aromatic seasoning is ready. It turns out to be very spicy - keep this in mind when using it. The seasoning keeps well in the refrigerator in a glass container.

Step 8

Gooseberry seasoning

Take an unripe gooseberry, wash it and discard it in a colander. Peel and wash the garlic. Wash and dry the dill.

Step 9

Mince gooseberries, dill and garlic through a meat grinder. Mix everything well. Add sugar or salt to taste, if necessary. Place the seasoning in glass jars, cover them with parchment and store in a cool place. Use this seasoning with meat dishes.
