“Think about rice first, then everything else,” says a Malaysian proverb. Rare cuisine in the world can do without rice dishes, and this is no coincidence. Rice is a real storehouse of B vitamins, it also contains protein, phosphorus, potassium and other substances necessary for the body.

- 275 g long grain rice;
- dried fruits;
- 250 g sugar;
- 50 g raisins;
- 50 g almonds;
- 30 g of vegetable oil;
- saffron;
- cinnamon;
- cloves;
- cardamom.
Instructions
Step 1
Sort and rinse the long grain rice well. Drain the water. If you use Vietnamese rice to cook pilaf with fruits and nuts, you do not need to rinse it. Fry it in butter for a few minutes, and then cook according to the recipe.
Step 2
Rinse dried fruits (apples, pears, dried apricots) with cold water and cover with boiling water for 20 minutes.
Step 3
Make a syrup. To do this, pour half a liter of cold water into a saucepan, add sugar and a pinch of saffron. Place a saucepan over medium heat and simmer the syrup for 30 minutes, until about 1/3 of the original volume remains.
Step 4
Heat vegetable oil in a saucepan and add cinnamon, cardamom and cloves to it. Stir and add the washed rice. Broil it for 2-3 minutes, stirring continuously. Then add water and bring to a boil. You need to take 3 parts of water for 1 rice. You can pour the rice with a mixture of water and milk. In this case, mix milk and water in a 2: 1 ratio.
Step 5
To make the pilaf crumbly, and the grains do not stick together, add a couple of tablespoons of vegetable oil to the water.
Step 6
Put the remaining saffron in water (or a mixture of water and milk), cover the pan and cook over low heat for 10 minutes. Then remove the rice from the heat.
Step 7
Without removing the rice from the pan, make a small depression in the center of the rice and place the dried fruit there, pouring in a little syrup.
Step 8
Sort the raisins in advance, rinse and pour boiling water for 15 minutes. Peel the almonds and cut the kernels. Add raisins with almonds to rice and dried fruits.
Step 9
Cover the well with rice, smooth with a spoon and pour in the rest of the syrup.
Step 10
Close the pan tightly with a lid, put on a low heat and cook pilaf with fruits and nuts for another 15 minutes, until the rice is cooked. Remove pilaf from heat, remove all whole spices from the surface and stir gently.
