    • Bechamel sauce:
    • butter - 3 tablespoons;
    • flour - 2 tablespoons;
    • milk - 2 glasses;
    • salt to taste;
    • pepper to taste.
    • Vanilla sauce:
    • milk 3 cups;
    • eggs 4 pieces;
    • sugar - 1 glass;
    • flour - 1 teaspoon;
    • vanilla sugar - 1 sachet.

Step 1

Release the egg into a tall bowl, add lemon juice and diluted mustard there (you can use ready-made) and beat everything well with a mixer. Then add a teaspoon of vegetable oil, without stopping to beat the mixture, until you have used up everything. The finished sauce is slightly yellowish and resembles thick sour cream in consistency, but it is very light. In winter salads from vegetables with meat and fish, mayonnaise is used more often than others.

To make béchamel sauce, heat the milk, but do not boil it. Then melt the butter in a skillet over medium heat and gradually add flour to it, stirring always. Continue stirring vigorously to prevent lumps from forming, gradually add milk.

When you've added all the milk, bring the mixture to a boil while stirring and simmer for a couple of minutes. Then season with salt and pepper and remove from heat. The béchamel sauce should thicken. To prevent a film from forming on it, crumble a little butter on top. This sauce is perfect for grilled meat and liver dishes.

Step 4

To make a sweet vanilla sauce, take the yolks and mash them white with sugar, then add flour. Gradually dilute the mixture with hot boiled milk and heat until thickened, but do not boil.

Step 5

Strain the sauce, add vanilla sugar and stir well. Vanilla sauce is good with pudding, casserole and cream.
