The delicate texture of risotto serves as an ideal base not only for mushrooms, vegetables and seafood. Every sweet tooth who has enjoyed the taste of this dish must have wondered - is it sweet? With berries, for example? It happens. And the most famous is Risotto Con Le fragole, strawberry risotto. If you master the technology of its preparation, you can cook this dish with other berries - raspberries, blackberries or blueberries.

It is necessary

    • 1 cup risotto rice (Arborio or Carnaroli variety)
    • 2 tablespoons butter
    • 1 small onion
    • 4 cups chicken or vegetable stock
    • 1 glass of dry white wine
    • 100 gr grated Parmesan cheese
    • 2 tablespoons heavy cream or mascarpone
    • 8 large fresh strawberries

Instructions

Step 1

Heat the broth. It shouldn't boil, but it shouldn't be lukewarm either.

Step 2

Melt the butter over medium heat in a heavy skillet with high sides and sauté the very finely chopped onion. Onions should not be caramelized, you need soft, so-called "glass", that is, transparent onions.

Step 3

Once the onion has reached the desired consistency, add the rice. Rice for risotto is never washed. It should be perfectly dry, covered with rice powder. Stir with a wooden spatula and cook the rice for a few minutes. Each grain of rice should be covered with oil.

Step 4

Pour wine into the rice. It does not need to be heated, but it must be removed from the refrigerator in advance and kept at room temperature for a long time. Stir the rice and wine thoroughly.

Step 5

Place a ladle of warmed broth next to the skillet. Pour in two ladles of broth and cook, stirring constantly with a wooden spatula. Wait until the rice is almost dry and add another ladle of broth. Cook while stirring.

Step 6

Make strawberry puree out of half of the strawberries.

Step 7

When the third ladle of broth has soaked into the rice, add the strawberry puree. Mix well and after a while add a little more broth. Cook, adding the rest of the broth until the rice is almost cooked, but still slightly crispy in the core when bitten.

Step 8

Remove risotto from heat and let sit for a few minutes. Never add cream, cheese or butter to risotto while it is too hot.

Step 9

Add heavy cream or mascarpone, stir gently. Add the parmesan and stir again.

Step 10

Garnish with the remaining strawberries.
