This cake successfully combines peaches with strawberries. The very base of the cake is very tasty, the layer of fruit is incredibly fragrant, and what a delicate cream! You can safely treat guests with such a cake.
It is necessary
- For the test:
- - 150 g flour;
- - 125 g sugar;
- - 100 ml of vegetable oil, orange juice;
- - 50 g of chocolate chips;
- - 2 eggs;
- - 2 tsp baking powder.
- For filling:
- - 500 g of strawberries;
- - 470 g of canned peaches;
- - 2 packs of clear jelly for pouring cakes.
- For the cream:
- - 500 g mascarpone;
- - 4 packs of vanilla sugar;
- - 1 tbsp. a spoonful of sugar;
- - fresh strawberries for decoration.
Instructions
Step 1
Grease a springform pan with butter, sprinkle with flour or breadcrumbs. Beat the eggs with sugar until a thick creamy mass is formed at high mixer speed. Pour in the vegetable oil and orange juice, whisking continuously. Add flour with baking powder, stir until smooth. Stir in the chocolate chips.
Step 2
Pour the finished dough into the previously prepared form and immediately place it in the oven, heated to 200 degrees. Bake the cake base until dry with a wooden stick. Then turn the finished base onto the wire rack, cool it completely.
Step 3
Place a cake ring around the cooled base. Rinse the strawberries, pat dry, remove the tails. Puree 150g fresh strawberries, set aside for now, and cut the rest of the strawberries into small cubes.
Step 4
Pour the peaches from the jar into a colander, drain the liquid into a container - you still need it. Cut the peaches themselves into small cubes. Prepare transparent cake filling from peach juice and jelly powder according to the instructions on the package, add water if necessary. Stir peaches and chopped strawberries to the jelly, pour onto the cake base, put in the refrigerator.
Step 5
Mix mascarpone with strawberry puree, sugar and vanilla sugar for a thick cream. Apply it evenly over the fruit, then put the cake back in the refrigerator. Garnish the strawberry-peach mascarpone cake with whole strawberries just before serving.
