To prepare "Curly Cotton" take 3 eggs, a glass of granulated sugar, 200 g of fresh sour cream, 1 tsp. baking powder, 1 tbsp. l. cocoa powder, 2 cups flour. For the cream and glaze, prepare 400 g of thick sour cream, 200 g of sugar, a bar of dark chocolate, 30 ml of milk, 20 g of butter.

Take a deep dish, break eggs into it, add sugar, beat with a whisk until a thick foam forms. Add sour cream, baking powder, mix everything well, start adding flour in several passes. To make the dough without lumps, add dry ingredients in a thin stream, while constantly beating the mass.

As a result, you will have a semi-liquid dough. Divide it into 2 equal parts. Add cocoa to one of them, this will make it possible to get a beautiful and original dessert. Bake the light dough in the same way.

Now start preparing the cream. Mix sugar and sour cream, beat with a mixer until the sugar is completely dissolved. It is worth noting that store sour cream is not whipped to the required thickness, so it is better to take rustic or cream. You can also put sour cream in cheesecloth a couple of hours before cooking and hang to remove excess serum.

So, put the finished light sponge cake on a large beautiful dish on which you will serve the cake to the table, grease it with the prepared cream. To make the crust soaked better, carefully cut off the top toasty layer from it.

Cool the dark crust a little, cut into small cubes about 2-2.5 cm in size. Put everything in a deep plate, pour over the rest of the sour cream, stir gently, wait until the biscuit absorbs the cream.
