Eclairs are loved by many since childhood, because this delicate and very tasty dessert cannot but please. I suggest you cook this delicacy not according to the usual recipe - bake chocolate eclairs.
It is necessary
- - dark chocolate - 200 g;
- - eggs - 3 pcs.;
- - butter - 120 g;
- - flour - 150 g;
- - white chocolate - 20-30 g;
- - cream - 200 ml;
- - cocoa powder - 2 tablespoons;
- - chocolate-nut paste - 1 tablespoon;
- - sugar - 1 teaspoon;
- - vanilla extract - 0.5 teaspoon;
- - sea salt - 0.5 teaspoon;
- - water - 1 glass.
Instructions
Step 1
Place 100 grams of butter in a small, loose saucepan. Fill it with water. Put this mixture on a very low heat and heat until the oil is completely dissolved. Pour a dry mixture of the following ingredients into the resulting mass: wheat flour, cocoa powder, sea salt and granulated sugar. Mix everything until smooth.
Step 2
Allow the resulting mass to cool completely, then mix it with vanilla extract and raw chicken eggs. Stir the mixture thoroughly after each egg addition. The dough for chocolate eclairs is ready.
Step 3
Cover the baking tray with baking paper and brush with the remaining 20 grams of butter. Then, using a tablespoon, spread the lumps of dough - eclairs - on the parchment at a sufficiently large distance from each other.
Step 4
In an oven preheated to a temperature of 190 degrees, send eclairs to bake for one quarter of an hour. After this period of time has passed, reduce the oven temperature to 150 degrees and cook the baked goods for another 20 minutes. It is very important not to open the oven while baking eclairs.
Step 5
Turn dark chocolate into a homogeneous mass, that is, melt it with a water bath. With the cream, do the following: place them in a separate bowl and beat until fluffy.
Step 6
After cooling the melted dark chocolate slightly, divide it into 2 parts. Combine one of them with chocolate-nut spread. Mix everything as it should. Then add whipped cream there. Stir again properly.
Step 7
After making a small cut on the side of the pastry with a knife, fill it with the chocolate-cream mass using a pastry syringe. Pour the remaining half of the dark chocolate over the eclairs. With white chocolate, do the following: chop on a coarse grater, then decorate the dessert with it. Chocolate eclairs are ready!
