Treat yourself and your loved ones to the juicy sweet and sour popular British dessert "Eaton Mess" - whipped cream with meringue pieces and fresh berries glazed with currant jelly. The dough base (tart) for this delicacy can be prepared 2 days before the arrival of the guests. About 1 hour before the dessert is served on the table, whip the cream, fill the tart with it and put the product in the refrigerator.

It is necessary

  • For the test:
  • - flour - 225 g;
  • - icing sugar - 50 g;
  • - cold butter (cut into cubes) - 150 g;
  • - egg (beat) - 1 pc.;
  • For filling:
  • - heavy cream - 300 ml;
  • - meringue cakes (break into pieces) - 4 pcs. (large);
  • - zest of 1 orange;
  • - assorted berries - 250 g;
  • - currant jelly - 4 tbsp. l.;
  • - water - 1 tbsp. l.

Instructions

Step 1

Sift flour and powdered sugar into a large bowl, put butter cubes and rub into small crumbs with your fingers. Pour in the egg and stir until large lumps are formed. Gather the dough with your hands into a ball, wrap with cling film and put in the refrigerator for 30 minutes.

Step 2

Preheat the oven to 190 degrees. Roll out the cooled dough and carefully place in a mold. Chop the dough with a fork and chill in a mold for 10 minutes. Cover the dough in a mold with a sheet of baking paper, pour dry beans onto the paper. Bake the piece for 20 minutes, then remove the paper with the beans and bake the base for another 5 minutes - it will become golden and hard.

Step 3

Beat the cream into a persistent foam, stir in the meringue and orange peel, which have been previously broken into pieces. Put the resulting cream in a mold with a baked base. Spread the berry platter on top (cut large berries into pieces). Heat the currant jelly with water until it is completely dissolved and grease the berries with the resulting glaze. The dessert must be chilled in the refrigerator before serving.
