From hazelnuts, walnuts or other nuts, you can make a delicious cake for a holiday or Sunday tea. It is better for novice housewives to choose the simplest recipe with a minimum of ingredients, experienced chefs will use more complicated options.
Chocolate nut cake
A simple classic dessert that cooks very quickly. You can serve the cake whole, but it is more convenient to cut it into portions in advance.
Ingredients:
- 250 g butter;
- 150 g dark chocolate;
- 150 g chopped walnuts;
- 4 eggs;
- 175 g flour;
- 1 tsp baking powder;
- 350 g sugar;
- 1 tsp vanilla sugar;
- halves of walnuts for decoration.
Steam the butter and chocolate, beat the eggs with a mixture of granulated sugar and vanilla sugar. Pour the sifted flour into the chocolate mass, carefully combine with the eggs. The mass should become completely homogeneous. Add nuts, fried in a dry pan and chopped into coarse crumbs.
Pour the dough into a greased fireproof mold. Put it in an oven preheated to 180 degrees. Bake the dessert for about 25 minutes, the surface of the cake should acquire a beautiful golden brown hue. Cool the product slightly in the mold and gently turn it onto a wooden board.
After cooling, cover the cake with a frosting of 50 g of dark chocolate and 4 tbsp. l. cream. The glaze is cooked over low heat until completely homogeneous. Decorate the finished dessert with walnut halves.
Hazelnut sand cake
Option for a children's birthday or other holiday. The recipe can be modified using other types of nuts: walnuts, almonds, Brazilian. Cooking will take no more than 1, 5 hours; it is better to serve the dish chilled.
Ingredients:
- 200 g wheat flour;
- 80 g sugar;
- 1 egg;
- 150 g butter.
For filling:
- 3 cups chopped hazelnuts
- 100 g of honey;
- 0.5 cups whipped cream;
- 75 g sugar;
- 3 tbsp. l. butter.
Prepare a dough with sugar, butter, egg and sifted flour. All components are whipped with a blender until smooth. Grease a detachable form with oil, put the dough into it in an even layer. Make several punctures with a knife, cover the dough with foil, pour beans or peas on top. Bake the cake in an oven preheated to 180 degrees. After 15 minutes, the dough will brown. Remove foil and peas from the cake, cool the workpiece right in the mold.
Put cream, sugar, honey, butter in a bowl. Heat the mixture over low heat for 1 minute. Peel the hazelnuts, heat them in a dry frying pan and crush them in a mortar. Add nut crumbs to the butter-honey mixture, mix well. Put the filling on the crust, smooth with a wide knife, put the mold in the oven for 20 minutes.
Take out the finished cake, cool, gently remove from the mold. Decorate the dessert with whipped cream and fresh mint leaves.
Apple and hazelnut cake
A very interesting and not too complicated English cuisine dessert. Nuts are added to the dough, and homemade apple jam serves as a cream.
Ingredients:
- 90 g of peeled hazelnut kernels;
- 90 g butter;
- 500 g sweet and sour apples;
- 125 g flour;
- 3 tbsp. l. icing sugar;
- 1 tbsp. l. finely chopped candied fruits;
- zest of 1 lemon;
- 2 tbsp. l. seedless raisins;
- 1 tbsp. l. apricot jam;
- whipped cream for garnish.
Set aside 8 nuts for decoration, crush the rest in a mortar. Beat the butter and sugar, add chopped nuts and sifted flour, knead the dough. Collect it in a ball and place in the refrigerator for half an hour.
Peel the apples, cut into slices. Fold the fruit into a saucepan, add jam and zest. Simmer the mixture for 5 minutes over low heat, put candied fruits and raisins in a saucepan, cook for another 5 minutes.
Divide the dough into 2 parts, roll out into a layer and put in the same round detachable forms. Bake the cakes in a preheated oven until golden brown. Cut one circle into 8 sectors, cool. Put the whole crust on a dish, spread the apple filling over it, cover it with dough triangles. Sprinkle the cake with powdered sugar, garnish with whipped cream curls and whole nuts.
