  • - butter - 200 g;

  • - granulated sugar - 150 g;
  • - baking powder - 1 tsp;
  • - lemon zest.
  • For the cream:
  • - milk - 700 ml;
  • - granulated sugar - 200 g;
  • - chicken yolks - 5 pcs;
  • - flour - 60 g;
  • - vanilla sugar - 1 sachet;
  • - lemon zest;
  • - cherries (fresh or frozen) - 200 g.

Instructions

Step 1

Remove the zest from the lemon by grating it. Try not to touch the white layer that gives the bitterness. Divide the grated zest into two parts. One part will go into the dough, the other will be needed for the cream.

Step 2

First you need to prepare the cream. To do this, grind the yolks, vanilla sugar and granulated sugar thoroughly. Add the zest of half a lemon. Add flour in small portions and stir until smooth.

Step 3

Heat the milk slightly so that it is warm. Pour milk in small portions into the yolk mass, stirring constantly to get a liquid of uniform consistency. Put the cream on low heat. Cook the cream until thick, stirring constantly. Remove the cream from heat and set to cool.

Step 4

While the custard is cooling, prepare the dough. Mash softened butter with sugar. Add the remaining half of the zest, one egg, and one white. You will need the yolk to grease the cake.

Step 5

Add baking powder and flour to the dough, kneading everything until smooth. You will have a thick, elastic dough. Roll the dough into a ball and remove one quarter from it.

Step 6

Put the rest of the dough in a split pan (about 22 cm in diameter). Gently line the bottom of the dough and make high sides (approx. 7 cm). Place half the custard over the dough and add the pitted cherries. If you are using frozen berries, then first remove excess moisture from them. Add the remaining cream.

Step 7

Roll out the deferred part of the dough into a layer so that its diameter is slightly larger than the diameter of the mold. Cover the cake with a sheet of dough and pinch the edges carefully.

Step 8

From the remaining dough, make decorations and lay them on the surface. If you have small cookie cutters, then you can use them to cut out figures and decorate the cake, or you can make circles by cutting them out of the dough with an ordinary glass.

Step 9

Whisk the remaining yolk and gently brush over the cake. Place the cherry pie in a preheated oven at 180 degrees and bake for approximately 45 minutes.

Step 10

Remove the finished cake from the oven and leave to cool completely. If the pie is cut hot, the filling will simply flow out.
