Chicken eggs are used in almost all cuisines in the world. They are crumbled into salads, added to dough, and desserts are prepared from them. However, not everyone knows how to choose the right chicken eggs.
Marking
In Russia, it is customary to use labeling, which includes parameters such as the size of the eggs and their freshness.
- "C" - table chicken eggs, with a sale period of up to 25 days;
- "D" - these are dietary eggs, the sale period of which should not exceed 7 days;
- "B" - the highest category of eggs. They are the heaviest, each weighing more than 75 g;
- "O" - these are selected eggs. Their weight is slightly lighter than that of the highest category eggs, and ranges from 65 to 74.9 g.
There is another classification:
- 1st category - these are eggs weighing from 55 to 64.9 g;
- 2nd category - weight from 45 to 54.9 g;
- 3 category - the weight of eggs ranges from 35 to 44, 9 g.
Accordingly, if you purchase products labeled "C1", then the package will contain table eggs belonging to the first category.
European producers on egg packages indicate the conditions in which the birds were kept, they also indicate the country in which the products were produced. In Russia, such a labeling system has not yet been adopted, although some manufacturers voluntarily indicate the region in which the product is produced.
Yolk color
The shade of chicken yolk directly depends on the feed that the birds receive. For example, a bird that receives corn on a daily basis lays eggs with a rich yellow yolk. If chickens are fed with colorless food, then the yolk will have a faded color. If earlier it was believed that pale yolks are an indicator of poor health of the bird, now this statement has lost its relevance. Modern hens are fed a diet containing many different additives. If the feed contains cantak-santin or lutein, then chickens will lay eggs with bright yolks, regardless of their health status.
Sale rules
The rules for the sale of eggs are very strictly regulated. 28 days - this is the maximum shelf life of these products, and the first day is considered to be the day of laying. Until the ninth day, the egg is considered "extra fresh". After 18 days, eggs can only be stored in the refrigerator.
