In France there is a tradition that people bake logs for Christmas. Christmas logs inside are greased with chocolate cream, they turn out to be very tasty and tender.

First, beat the egg yolks with granulated sugar and vanilla until frothy. Add flour in a small stream and mix everything well.

Whisk the whites and a pinch of salt in a mixer until frothy. Add protein to flour mixture.

Take a baking sheet, line it with parchment paper and spread a thin layer of dough evenly over the surface.

Place the sponge cake in an oven preheated to 180 degrees and bake for 15-20 minutes. Remove from oven and flip onto a damp towel, remove the parchment paper and cut the biscuit into 4 strips lengthwise.

And then cut each piece in half. And roll up. Wrap in a tea towel and let sit for 15-20 minutes.

Prepare Ganache cream. Chop dark chocolate coarsely. Pour cream into a saucepan and bring to a boil, then add chocolate and cook for 1-2 minutes, remove from heat. Place the cream in a cold place, it should harden.
Step 7
Unfold the rolls, grease them with cream inside and wrap them again in the roll. Lubricate the top with cream too. Sprinkle the rolls with powdered sugar and serve.
