Trout with walnut-vinegar sauce

- trout - 500 g

Sterlet in pomegranate sauce

- sterlet - 500 g

- vegetable oil 20 g

-wheat or corn flour - 1-2 tbsp. l.

- pomegranate juice - 1 1/2 cups

- peppers - 5 g

- pomegranate seeds - 50 g

- egg yolks - 2 pcs.

-salt to taste

Cut the sterlet into portions, rinse and peel, then boil until half cooked in salted water. Breaded the prepared fish in flour and fry on both sides in vegetable oil until tender and golden brown.

Bring the pomegranate juice to a boil and gently add the crushed egg yolks, pour them into a container with boiling juice in a thin stream. Then the sauce can be removed from the heat and filtered, add pounded chilli.

Place the fried fish on a dish, pour with pomegranate sauce and sprinkle with pomegranate seeds.
