In the summer, a lot of all kinds of vegetables grow on the beds: peppers, zucchini, and so on. I suggest making a vegetable pie with cheese and egg filling from them. This dish is delicious, light and healthy. Agree that this is exactly what you need in the heat.
It is necessary
- For the test:
- - flour - 200 g;
- - butter - 100 g;
- - egg - 1 piece;
- - milk - 1-2 tablespoons.
- For filling:
- - sweet peppers - 2 pcs;
- - zucchini - 1 pc;
- - eggs - 2 pcs;
- - cream - 300 ml;
- - hard cheese - 75 g;
- - salt;
- - pepper.
Instructions
Step 1
Take a deep-bottomed dish and put the flour through a sieve. Do not defrost the butter, but cut it cold, chopping it into small cubes. Add to the same dish. Mix the ingredients well together so that a small crumb forms as a result. Then add the egg and milk to this mass and knead the dough. When it's ready, wrap it with cling film and refrigerate for about 30 minutes.
Step 2
Place the chilled dough on a flat work surface and roll it out, taking a rolling pin, along the diameter of the dish in which you will bake it. Then transfer the resulting layer to a baking dish and puncture it in several places with a fork.
Step 3
After preheating the oven to a temperature of 200 degrees, place the dish with the dough in it for about a quarter of an hour. This will end up with a vegetable pie crust.
Step 4
While the cake is cooling, cut the bell pepper into small pieces, after removing the core from it. Place in a saucepan with oil, preferably olive oil, and fry until soft. Then season with salt and pepper. With the zucchini, do the following: peel and chop, cut into thin half rings. In this form, send to boiling water and cook for 3 minutes. After the time has elapsed, remove, place in a colander and let the liquid drain.
Step 5
Grind the cheese by grating it on a coarse grater. Combine cream and eggs in one bowl and beat. Then add the grated cheese, as well as salt and pepper to the resulting mixture. Mix everything well.
Step 6
Place chopped zucchini and peppers on the cooled crust. Pour a mixture of cheese and eggs over the vegetables. In the oven, after heating it to a temperature of 180 degrees, send the dish for about half an hour. Vegetable pie with cheese and egg filling is ready!
