Kuksi is a delicious Korean dish that is very popular, especially during the hot summer months. You can cook real kukxi, observing the traditions of the national Korean cuisine at home.
Recipe for cooking kuksi
In order for kuksi to turn out the way highly qualified chefs are used to seeing it in professional kitchens, it is necessary to choose the right set of seasonings and spices and observe the proportions when preparing the dish.
For six large servings, you will need:
- meat - 500 grams;
- special noodles for kuksi;
- chicken eggs - 3 pcs.;
- tomatoes - 1 kg;
- cucumbers - 1 kg;
- cabbage - 250-300 grams;
- garlic - 3 cloves;
- onions - 2-3 pcs.;
- spices and seasonings (salt, pepper, sugar, cilantro, lotus, vinegar, liquid soy, etc.) - to taste.
For cooking kuksi, take beef pulp. Cut the meat into thin 1x3 cm strips. Fry the meat in a skillet with vegetable oil. Chop the onion and add it to the meat. You can add a little water if necessary. Simmer the meat over low heat for about thirty to forty minutes. Alternatively, you can simply boil the meat and cut it into slices.
Prepare the noodles. To do this, simply pour it in a saucepan with cold water for half an hour, then drain the water by throwing the noodles in a colander.
Now you can start preparing the broth. Take three liters of chilled boiled water. Season the water with one tablespoon of vinegar, two to three peeled tomatoes, grated through a grater. Add two tablespoons of salt, five tablespoons of sugar, and a pinch of lotus seasoning to the water. Put the resulting broth in the refrigerator so that it can cool and infuse.
Beat eggs until smooth, add salt. Bake thin pancakes with beaten eggs. When the pancakes are cool, cut them into thin strips.
Cut the cucumbers into thin half rings, add a pinch of salt and soak them in water for half an hour. Then drain the water and add finely chopped onion, pepper, chopped garlic, chopped cilantro and half a teaspoon of sugar to the cucumbers. Chop the tomatoes separately. Chop the cabbage thinly.
How to serve kuksi correctly
This dish is most often served cold. Take a deep plate or bowl. Put the noodles in it, cover with chilled broth. Arrange egg slices, cucumbers, cabbage, chopped tomatoes in a circle. Place the meat in the center of the bowl.
A properly decorated kuksi dish looks very impressive. Separately, you can serve liquid soy and vinegar so that those who wish can add them at their discretion. You can also serve various spices and seasonings separately.
