Rabbit in a vegetable fur coat is a unique dish that combines the most tender meat in a spicy marinade, vegetables, aromatic spices and fresh herbs. It is easy enough to prepare and baked quickly. Therefore, it is suitable for both a family dinner and a festive feast. You can always pleasantly surprise your guests with this recipe!
Rabbit Ingredients:
- 1 carcass of a young rabbit;
- 1 tbsp. l. mayonnaise;
- 1 tbsp. l. olive oil;
- 1 tbsp. l. soy sauce;
- 1 tbsp. l. honey;
- 1 tsp mustard with grains;
- granulated garlic;
- salt, pepper, provencal herbs.
Ingredients for vegetables:
- 0.7 kg. potatoes;
- 2 bell peppers;
- 2 onions;
- 2 carrots;
- 2 tbsp. l. olive oil;
- 3 bay leaves;
- 10 peppers;
- 5 sprigs of dill;
- salt and thyme.
Preparation:
- Wash the rabbit carcass and cut into portions.
- In a saucepan, combine and mix soy sauce, mayonnaise, butter, honey, mustard with grains, Provencal herbs and salt. This mass will be an excellent marinade.
- Grease pieces of meat generously with marinade, put in a saucepan, tamp slightly, cover and leave to marinate for 3-4 hours at room temperature.
- Wash and peel all vegetables. Cut the potatoes into slices, the peppers into large chunks, the carrots into thick half rings, and the onions just into rings.
- Put all the chopped vegetables in a bowl, pour with oil, season with salt and spices, mix well.
- For cooking a sweet rabbit in a vegetable fur coat, a duckling is best suited. Therefore, put bay leaves and peppercorns on the bottom of the ducklings. Put ½ part of vegetables in spices on top of the peas.
- Place the pieces of rabbit tightly on the vegetables and cover them with the second part of the vegetables. Tamp everything well with your hands, cover with a lid and send to the oven for 1 hour, preheated to 200 degrees.
- Meanwhile, wash the dill, separate its leaves from the twigs. Finely chop the twigs with a knife, chop the leaves and put them aside for a while.
- Half an hour before the end of cooking, remove the duck from the oven, sprinkle its contents with dill sprigs, cover again and send to the oven.
- After 30 minutes, remove the finished sweet rabbit from the oven, sprinkle in portions on plates, sprinkle with dill and serve along with your favorite pickles.
