Pork is used to prepare a wide variety of dishes. Most often it is fried or baked. Like any meat, pork goes well with vegetables. Pieces of pork loin baked under a vegetable coat will be a good main course for a family dinner or celebration.

- onion - 1 pc;
- garlic - 2 cloves;
- red bell pepper - 1 pc;
- potatoes - 2 pcs;
- carrots - 1 pc;
- fresh herbs - 1 bunch;
- lemon - 1 pc;
- olive oil - 1 tablespoon;
- salt
- ground black pepper
- curry
- paprika.
Instructions
Step 1
If the meat is frozen, thaw it at room temperature or place it in the refrigerator overnight on a platter. Remove excess fat from meat if present. Rinse it under cold running water. Blot it with a paper towel or napkin to remove excess moisture, and cut into 100g portions.
Step 2
Peel the garlic and pass through a press. Squeeze juice from lemon and mix with garlic. Add olive oil, salt, black pepper, a pinch of curry, paprika and mix well. Place the meat in a deep bowl, sprinkling each piece with lemon marinade. Leave the meat to marinate for 20-30 minutes.
Step 3
Peel the onion and chop finely. Remove the stem and seeds from the red pepper. Cut each half of the pepper lengthwise into several pieces and slice thinly.
Step 4
Peel the carrots with potatoes and grate on a medium grater. Squeeze the potatoes well from the resulting juice.
Step 5
Mix the prepared vegetables in a deep bowl, add finely chopped herbs, salt, black pepper, drizzle with olive oil and mix well.
Step 6
Line a baking tray with foil and place the pieces of meat on it. Place the vegetables on top of each piece. Cover the baking sheet with a sheet of foil and pinch the edges well so that the resulting juice does not flow out during cooking. Roast pork in an oven preheated to 200-230 degrees for 40-45 minutes.
Serve as a stand-alone dish garnished with fresh herbs.
