To cook pork under a fur coat, you need the following ingredients: 500-600 g of pork, 2-3 medium potato tubers, 2 medium onions, 3 medium tomatoes, 200 g of hard cheese, 2 cloves of garlic, 100 g of sour cream, salt, ground black pepper, fresh dill or parsley. A little vegetable oil is needed to grease the baking dish.

Almost any part of the carcass is suitable for cooking pork. However, for a festive table, it is better to cook pork under a fur coat in portions. In this case, the neck is the best choice. It is washed, dried with paper towels and cut across the fibers into large pieces, about 1.5 cm thick. Each piece must be carefully beaten off.

To prevent blood and small pieces from scattering throughout the kitchen when beating meat, it is recommended to wrap the pork with plastic wrap.

The garlic cloves are passed through a press. Then the pieces of pork are rubbed with salt, black pepper, garlic and your favorite seasonings. In this form, the meat should lie down for 20-30 minutes.

Peeled onions. Each head is cut lengthwise and chopped into thin half rings. Rub hard cheese. Potato tubers are washed in running water, peeled and then chopped with a blender. You can use a coarse grater to chop potatoes.

Mashed fresh potatoes darken quickly in the air, so it is recommended to pour it over with cool water. Before use, the potatoes are thrown in a colander until the liquid is completely drained.

Tomatoes need to be peeled. To do this, the fruits are cut crosswise, scalded with boiling water and dipped in cold water. After that, the skin is easily removed. Prepared tomatoes are cut into thin circles.

A baking dish is greased with vegetable oil. Pieces of pork are placed on the bottom of the mold. On them are thinly chopped onions. Gently place chopped potatoes on top of the onion, trying to form portions that are approximately equal in size. The top layer is tomato circles. Sour cream is laid out on each portion of pork under a fur coat.

If the dish is being prepared for a family meal, you can cut the pork into small pieces across the grain and put all the ingredients in a baking dish in layers: meat, onions, potatoes, tomatoes.

The oven is heated to 180 ° C. The form is sent to the middle level. The baking time is 40-50 minutes. 15 minutes before the dish is fully cooked, the form is taken out of the oven and sprinkled with grated cheese on the pork under a fur coat. Then the dish is returned to the oven and waiting for the cheese to turn into an appetizing golden brown crust. You can sprinkle cheese on the dish just before baking. In this case, cover the form with foil. Otherwise, the cheese will burn, and the appearance, as well as the taste of pork under the fur coat, will be spoiled.

The finished dish is served hot, garnished with fresh dill or parsley. If pork was cooked in layers under a fur coat, it is cut into approximately equal pieces before serving.
