2 eggs, 2 egg yolks, 200 grams of powdered sugar, 320 grams of raspberry jam, 225 grams of flour, 35 grams of food starch
Instructions
Step 1
Beat eggs, egg yolks, icing sugar and 1 pinch of salt until thick foam forms.
Step 2
Rub the raspberry jam through a sieve and add to the egg mass. Mix. Sift flour and starch from above and mix again.
Step 3
Heat the oven to 50 degrees. Line a baking sheet with baking paper. Fill a pastry bag with a nozzle with a protein mass. Squeeze circles with a diameter of 2 cm out of it gently onto a baking sheet. Dry in the oven for about 1 hour.
Step 4
Raise temperature to 190 degrees and bake for about 12 minutes.
Step 5
Chill and spread the jam on the flat side of the cookie. Place the cookies together to make balls.
