Creamy broccoli and bacon soup is made with fried flour, so its consistency is thick. It is prepared in 30-40 minutes, which means that it is perfect as a weekday dinner.
It is necessary
- - 100 g bacon,
- - 1 onion,
- - 1 tbsp. flour,
- - 1 glass of chicken broth,
- - 3 potatoes,
- - 500 g broccoli,
- - 1 can of canned corn,
- - thyme or basil as a seasoning,
- - 250 ml heavy cream,
- - salt and black pepper to taste.
Instructions
Step 1
First, you need to cut the bacon into thin, round, even pieces. Then it needs to be fried in a pan over low heat until golden brown, about 5-6 minutes.

While the bacon is fried, you need to finely chop the onion and cut the potatoes into small cubes.

Broccoli is divided into inflorescences, then cut into small pieces.

Put the onion in the pan where the bacon is fried and fry until cooked for about 5 minutes.

Flour is added there and everything is fried for about 30-40 seconds. Then the broth is poured in and potatoes are added, everything is brought to a boil. Salted to taste. Boil the soup over low heat until the potatoes are half cooked, about 7 minutes.
Step 6
Broccoli, corn, thyme and cream are added to the soup. Cook until broccoli and potatoes are cooked, about 10-13 minutes.
Step 7
The soup is poured into bowls, sprinkled with fried bacon and served. You can decorate it with fresh herbs. You can add sour cream or mayonnaise.
