Often the question arises before us: what to cook for breakfast? I want not only something useful, but also tasty and unusual. Fritata with eggs, ricotta and zucchini will come to the rescue. It will not only charge you with energy, but also delight you with a beautiful appearance.
Frittata: Required ingredients for 8 pieces
- 4 eggs;
- 150 g ricotta;
- 60 ml of milk;
- 45 g of grated Parmesan;
- 2 small zucchini;
- salt to taste.

Frittata is a traditional Italian dish where eggs are the main ingredient and the rest are selected to taste. Frittata can be baked in any shape, but the most interesting dish comes from muffin tins.
Preheat the oven to 175 ° C. Mix both eggs, ricotta and milk in a bowl. Add salt, beat lightly.
Add the parmesan, stir the ingredients again.
Pour the egg mixture into the muffin pan, about one centimeter short of the rim.
Wash the zucchini and cut them lengthwise into thin strips using a vegetable cutter. You can do this with a knife, but only if you can cut the zucchini as thin as possible, otherwise they will remain soggy.
Place 5-6 strips of zucchini on top of each other, as shown in the photo.
Roll gently and add to the muffin pan to the egg mixture. It will turn out a kind of flower from a vegetable marrow. Repeat with the remaining courgettes, filling out the entire muffin mold.
Bake in the oven for 25-30 minutes. The eggs should turn out to be a beautiful golden color, but you need to make sure that they do not burn, otherwise this will ruin the appearance of the dish.
Frittata with eggs and zucchini is best made for breakfast, but it makes an interesting snack for other occasions as well.
