Rutabaga is not as popular as it deserves. Like any vegetable, it is good for the body, can significantly speed up recovery and even cure a severe cough. But even if you are not complaining about your health, cook different dishes from rutabaga, and you will see that it is also very tasty.
It is necessary
- For porridge:
- - 2 rutabagas;
- - 1 onion;
- - 300 ml of 2.5% milk;
- - 50 g flour;
- - salt;
- - vegetable oil;
- For cutlets:
- - 1 kg of swede;
- - 4 chicken eggs;
- - 200 g bread crumbs;
- - 100 g of butter, 20% sour cream and sugar;
- - 50 g of raisins;
- - 30 g flour;
- - a pinch of nutmeg;
- - vegetable oil;
- For the salad:
- - 1 swede each, celery root and green apple;
- - 150 g of 20% sour cream or fatty yogurt;
- - 20 g of dill;
- - 20 ml lemon juice;
- - salt;
- For gratin:
- - 1 kg of swede;
- - 150 g of hard cheese;
- - 2 cloves of garlic;
- - 200 ml 35% cream;
- - 2 sprigs of thyme;
- - 1/2 tsp ground black pepper;
- - salt;
- - vegetable oil.
Instructions
Step 1
Rutabaga porridge
Peel the root vegetables, cut into arbitrary slices and boil in slightly salted water until tender. Peel the onion, chop it into small cubes with a knife and sauté in vegetable oil until soft over moderate heat.
Step 2
Drain the broth from the swede and crush the vegetable into puree using a special press. Mix this mass with flour, onion frying, milk and mix well so that there are no lumps. Salt the dish to taste and heat for 5 minutes.
Step 3
Lean rutabaga cutlets
Boil peeled rutabagas, mince or grind in a blender. Stir in the minced vegetable with beaten eggs, half melted butter, 100 g bread crumbs and season with nutmeg.
Step 4
Form cutlets from the resulting mass, roll them in the remaining breadcrumbs and fry in vegetable oil until golden brown. Wash the raisins and boil them for 15 minutes in 50 ml of water, adding the remaining butter and sugar. Stir in flour, sour cream and serve with the main course.
Step 5
Diet rutabaga salad
Cut off the peel from the root vegetables and the apple, remove the core from the latter. Grate everything on a coarse grater and sprinkle the fruit with lemon juice so that it does not darken. Combine all the products in one bowl, season with sour cream or yogurt, salt and sprinkle with chopped dill.
Step 6
Rutabaga gratin
Slice the rutabaga without the skin into thin, almost transparent slices and place them in a saucepan. Pour boiling water in there and cook the vegetable for 3 minutes. Gently discard it in a colander or sieve and shake it several times, allowing the liquid to drain completely.
Step 7
Boil the cream, add the grated garlic, chopped thyme, pepper and salt. Reduce the temperature to low and simmer the sauce until thick, about 3 minutes. Transfer the cookware to the cork rack.
Step 8
Preheat oven to 180oC. Coat a baking dish with vegetable oil, pour some of the gravy on the bottom and flatten it with a wooden spatula. Place the rutabaga slices on top, stacking on top of each other, and cover with a serving of sauce. Repeat the above steps until you run out of food.
Step 9
Finely grate the cheese and sprinkle generously with gratin. Place the dish in a hot oven and bake for 35-40 minutes until golden brown.
