Semolina pie

To make semolina pie, you will need the following products:

- 400 g flour;

- 150-200 g semolina;

- 150 g of apples;

- 120 g of cottage cheese;

- 3 eggs;

- 100 g margarine;

- 1 lemon;

- 150 g granulated sugar;

- 50 g of raisins;

- vanillin or cinnamon;

- salt;

- baking soda.

Remove the margarine from the refrigerator ahead of time to soften it. Wipe the curd through a sieve. Wash the carrots and apples, dry and grate on a coarse grater. Pour the lemon over with boiling water, grate the zest on a fine grater, and squeeze the juice from the pulp. Rinse the raisins with warm water, then soak for 20 minutes, then dry on a paper towel.

Mash soft margarine with granulated sugar, add eggs and freshly squeezed lemon juice, a pinch of salt, baking soda on the tip of a knife, and stir in grated carrots and apples, wheat flour, semolina, cottage cheese, prepared raisins, grated lemon and vanilla zest, or cinnamon of choice. Then mix all the components into a homogeneous mass.

Brush an ovenproof baking pan with margarine, sprinkle with breadcrumbs, spread out and smooth the surface. Place the baking pan in the oven over medium heat for about an hour.

Remove the finished semolina pie from the mold, brush the top with butter and sprinkle with powdered sugar.

Fruit and curd pie with semolina

To bake a pie with semolina according to this recipe, you need to take:

- 1 kg of apricots;

- 50 g margarine;

- 100 g of granulated sugar;

- salt;

- 3 eggs;

- 500 g of low-fat cottage cheese;

- 150 ml of yogurt;

- 2 lemons;

- 75 g semolina;

- 2 tsp baking powder;

- 40 g of ground almonds;

- icing sugar.

Pour boiling water over the apricots, cool slightly and remove the skin from the fruit. Remove the seeds and cut the pulp into small cubes. If desired, apricots can be replaced with other fresh or canned fruits (peaches, plums). At room temperature, mix margarine with granulated sugar, a pinch of salt, eggs, cottage cheese, grated through a sieve, yogurt and grated lemon zest. Mix semolina with baking powder and combine with the rest of the ingredients. Add finely chopped apricots and mix thoroughly.

Grease a detachable dish with a diameter of about 26 centimeters, sprinkle with 1 teaspoon of ground almonds, put the curd mass into it and smooth. Sprinkle the remaining almonds and powdered sugar on top. Bake the fruit and curd cake at 180 ° C for about 60 minutes.
