Bacon soup has a rich, full-bodied flavor of onions, bacon, potatoes, parsnips and apples. This soup is incredibly light and delicious. You can eat it in a moment, because it melts so gently in your mouth.
It is necessary
- -6 slices of bacon, cut into thick chunks
- -2 tablespoons of butter
- -2 large potatoes, peeled and diced
- 3-4 large or 6 medium parsnips (3 cups), peeled and chopped
- -2 medium apples, sliced. No need to clean.
- -1 onion, chopped
- 4 cloves of garlic, chopped
- - about ⅛ teaspoon nutmeg or freshly grated nutmeg
- -1 bunch of parsley tied in twine
- -4 cups chicken stock
- 1/2 pint heavy cream
- -Salt / Black Pepper, to taste
- - green onions and pieces of bacon for garnish
Instructions
Step 1
Fry the bacon in a large soup pot until crisp. Chop into small pieces after roasting and set aside.
Step 2
Add a few tablespoons of butter to the saucepan. Reduce heat, then add all vegetables: first potatoes (give it one to two minutes to heat), then parsnips, garlic, black pepper, onions, nutmeg, apples, parsley. Simmer everything for about 15-20 minutes, until the vegetables are tender. Remove the parsley after cooking.
Step 3
Use a blender to blend all the ingredients from step 2.
Step 4
Transfer the mixture of vegetables from a blender to a deep bowl. Pour cream over everything. Season with salt and pepper to taste.
Step 5
Serve chilled with a little greens on top.
