Preparing a gorgeous cake for the holiday is a task that not every housewife can do. But, many still want to surprise guests with an original and very tasty dessert. The best cakes are made on a protein basis, and if you decide to make a meringue cake, then pay attention to this recipe. It is quick, simple, even an inexperienced hostess can handle it.
It is necessary
- For cakes:
- - 4 egg whites,
- - 1 glass of fine sugar,
- - lemon juice to taste.
- For the cream:
- - 170 grams of butter,
- - 3 egg yolks,
- - 2 tbsp. tablespoons of sugar
- - 3 teaspoons of cocoa powder,
- - 150 ml of milk,
- - 150 grams of pitted prunes,
- - 20 grams of chocolate.
Instructions
Step 1
Carefully separate the whites from the yolks. The eggs should be cold. Whites and yolks should be in separate cups. You won't need 4 yolk, so set it aside.
Step 2
Whisk the whites until firm peaks. While whisking, add one tablespoon of sugar at a time until the glass runs out. If desired, add 2-3 drops of lemon juice while whipping.
Step 3
Draw a 21-centimeter circle on baking paper. Transfer the paper to a baking sheet. Put the protein mass (half) on the drawn circle, go a little beyond the borders of the circle. Protein trimmings are needed for the crumb. Do the same with the second half of the protein mass.
Step 4
Preheat the oven to 100 degrees. Place the baking sheets and bake the cakes for about two hours. The oven door must be slightly open. Swap the trays one hour after the start of baking.
Step 5
For the cream.
Heat 150 ml of milk, then add 2 tablespoons of sugar and 3 teaspoons of cocoa, stir. Dissolve sugar over low heat, do not bring to a boil. Remove from heat and cool slightly.
Step 6
Pour the lightly beaten egg yolks into the milk. Put the milk on fire and bring it to thicken. You do not need to boil. Cool to room temperature. Grind the cooled chocolate mixture with butter, which must be added in small portions.
Step 7
Rinse the prunes well, cover with hot water and leave for half an hour. Then drain, pat dry and cut into strips.
Step 8
Remove the protein cakes from the oven. They should be dry. Separate the paper with gentle movements, cut in a circle. Do not press on the cakes, they are very fragile. If you break it a little, do not worry, the cream will stick together. Chop the cuttings into crumbs.
Step 9
Cool a small bar of chocolate and grate, mix with the scraps from the cake layers.
Step 10
Collect the cake.
Put half of the cream on the first cake, flatten, put prunes on top. Cover with a second crust. Spread the remaining cream over the entire cake. Sprinkle crumbs on the cake, decorate to your liking, and refrigerate for three hours.
