Apricot pie is not only delicious, but also a healthy dish. It requires the simplest ingredients and about an hour and a half to bake it. The finished fragrant cake will become a real decoration of any table.

It is necessary

    • 500 g apricots;
    • 200 g butter;
    • 200 g sugar;
    • 2 tsp vanilla sugar;
    • 3 eggs;
    • 10 g baking powder or 1 tsp. slaked soda;
    • 600 g flour.

Instructions

Step 1

Divide the thoroughly washed apricots in half, free them from the seeds and cut into wedges. Mash butter with vanilla and sugar, add eggs and mix well. Stirring can be stopped when the sugar grains are no longer felt.

Step 2

Add flour and baking powder (you can replace it with baking soda), knead the dough. It should be thick enough and not stick to your hands. The quality of the cake depends on the consistency of the dough - if the dough is thin, it will not bake well. The outside may already begin to burn, but the inside will still be damp.

Step 3

Prepare the mold by greasing it with vegetable or butter. Place two-thirds of the dough on the bottom of the mold and flatten, the edges should rise slightly on the sides of the mold, forming a semblance of a shallow (2-3 cm) bowl.

Step 4

Lay the apricots on the dough, it is advisable to lay them out in even symmetrical rows - this is more beautiful. But you can also simply pour out the slices and distribute them evenly over the dough, which saves time.

Step 5

Roll out the remaining dough into a layer about 5-7 mm thick and cut into strips 1, 5-2 cm wide. Lay them on the apricots in two intersecting rows, you get a net of dough through which you can see fruit slices.

Step 6

Preheat the oven to 180 degrees and place the pie in it for about 35-40 minutes. Watch how it browns. Reduce the heating temperature slightly if necessary.

Step 7

The doneness of the pie is determined in the traditional way - pierce it with a toothpick. If there are no traces of dough on it, the dish is ready. As a rule, such a check is required only for the first preparation. Having made the cake two or three times, you will experimentally select the right time and the most suitable temperature for baking.

Step 8

After removing the cake from the oven, brush the top of the cake with butter to give it a nice shine. The finished dish should be served slightly cooled, but not cold.
