  • • 220 g of sugar;

Instructions

Step 1

The first step is to thoroughly rinse the apricots and place them on a plate. Wait a bit until excess water drains from the apricots. Remove the pits from the apricots, and mash the pulp using a blender. Since not everyone has this device, you can simply boil the apricots and grind them through a fine sieve. A couple of tablespoons of granulated sugar should be added to the finished puree. Mix everything thoroughly.

Step 2

All eggs must be divided into yolks and whites. This must be done very carefully so that they do not mix. Place the yolks in a separate bowl and add 4 large spoons of sugar to them. Rub everything well. It is necessary for the sugar to completely dissolve. Add flour gradually, stirring well. Here you need to add apricot puree in parts, stirring constantly. It is necessary to create a uniform consistency.

Step 3

Whisk the whites, adding a little salt. Add 1 tablespoon of sugar there and beat again until a fluffy foam forms. You can take a moment and turn on the oven so that it heats up to 180 degrees. Send the proteins to the dough and stir gently.

Step 4

Grease the baking dish with oil and sprinkle generously with breadcrumbs on top. Put the prepared dough in a mold and flatten. Place the dish in the oven for half an hour.

Step 5

The apricot pie is ready. It should turn out to be lush, but it will settle over time. This will not affect its taste or aroma in any way. Garnish with icing sugar before serving.
