Delicious vegetarian vegetable soup is good for adults and children. Its preparation will take little time, and there will be a lot of vitamins on the plate. You can cook such a dish in summer and early autumn, when nature generously endows with fresh vegetables.

It is necessary

    • 1 potato;
    • 300 g of cauliflower;
    • 1 bell pepper;
    • 2 zucchini;
    • 100 g green peas (fresh or frozen).
    • 1 onion;
    • 1 carrot;
    • 1 tomato;
    • Bay leaf;
    • salt and black pepper to taste;
    • fresh herbs.

Instructions

Step 1

Rinse potatoes under water and peel them. Cut into small cubes and wash several times in water to remove starch. Use a sharp knife to peel the skins off the zucchini in a thin layer. Cut the peeled zucchini into cubes. Disassemble the cauliflower into inflorescences. Rinse the inflorescences gently under water. Cut each inflorescence into small pieces.

Step 2

Pour water into a saucepan and add chopped vegetables such as potatoes, zucchini and cauliflower. Add green peas to them. Place the pot on the fire and simmer for 20 minutes after boiling.

Step 3

While the vegetables are boiling, take an onion, peel it and chop finely with a knife. You can grind the onion in a blender. Cut the peeled carrots into slices. If it is large, then cut it into semicircles. Rinse the bell peppers under water, remove the core and seeds and cut into half rings. Pour boiling water over the tomato, peel and cut into 4 pieces. Cut each part into small wedges.

Step 4

Pour 2-3 tablespoons of sunflower oil into a frying pan and put on high heat. Gently put chopped onion in hot oil, fry until golden brown. Add carrots, bell peppers and tomatoes to the onion. Fry vegetables for 3 minutes over high heat, and then another 5-7 minutes, covered with a lid, over low heat.

Step 5

Add the onions, carrots, peppers and tomatoes sautéed in a skillet to the pan with the vegetables. Add bay leaves, salt and black pepper to taste. Simmer the soup, covered over low heat, for 10 minutes.

Step 6

Pour the prepared soup into portioned bowls and sprinkle with finely chopped fresh herbs. Optionally, you can add a teaspoon of sour cream to the soup bowl, which will add a light creamy taste to the vegetable dish.
