With the onset of cold weather, you often want a warming hearty soup. It turns out that you can make such a soup using only herbal ingredients. It will turn out to be very rich and tasty if you add two ingredients: mung bean and bulgur. Mung beans are Indian peas that are very high in protein and do not cause bloating like some legumes. And bulgur is a golden-colored wheat cereal that has a pleasant taste and does not boil over.

  • - carrots - 1 pc.
  • - tomato - 2 pcs.
  • - bell pepper - 1 pc.
  • - zucchini - 1/2 pc.
  • - mung bean - 1/3 cup
  • - bulgur - 1/2 cup
  • - vegetable unrefined oil
  • - spices: asafoetida, black pepper, ground ginger, cumin (cumin), turmeric
  • - greens: dill or parsley

Step 1

Rinse the mung bean, place it in a saucepan with water. Put it on low heat. After 20 minutes, add bulgur to the pan. Salt.

Wash all vegetables. Cut the potatoes and zucchini into small cubes, and even smaller bell peppers and carrots. If the potatoes are young, with a thin skin, then they can not be peeled. It contains more vitamins than the tuber itself. But this only applies to young potatoes.

Put potatoes, zucchini and peppers in boiling water, add half a liter of cold purified water.

After making a cross-shaped incision on the tomatoes, scald them with boiling water, remove the skin. Cut them into small cubes. Heat vegetable oil in a frying pan, fry spices in it: asafoetida, black pepper, cumin and ginger. These spices have warming properties and aid in digestion. Asafoetida gives the aroma and flavor of onion and garlic, while leaving no odor in the mouth and contributes to better digestion of the dish.

When the spices are a little fried, add tomatoes and carrots to them. Add turmeric for color, mix well and simmer for seven minutes without closing the lid.

Step 4

Bring the tomatoes and carrots until half cooked and add them to the saucepan. Wait until the potatoes and carrots are tender and turn off the soup. Add chopped greens, cover and let it brew for 10 minutes. This soup is also suitable for vegans as it does not use animal products.
