Fried pies are good not only with sweet, but also a variety of savory fillings: with cabbage, with mushrooms, with meat, with potatoes, with eggs and green onions. The dough for their preparation is also used very different: yeast, puff, kefir and so on.
Fried pies with potatoes and herbs: a recipe
Required Ingredients:
For the test:
- 300 milliliters of sour kefir;
- 400 grams of wheat flour;
- 1 teaspoon of granulated sugar;
- 1 teaspoon of baking soda;
- 1 teaspoon of salt;
- 3 tablespoons of refined sunflower oil.
For filling:
- 5 potatoes;
- 1 onion;
- 1 chicken egg;
- 100 milliliters of milk;
- 3 tablespoons of butter;
- 1 bunch of dill;
- salt;
- vegetable oil.
Stir baking soda, sugar, salt and 1 tablespoon of vegetable oil in kefir. Stir with a spoon and add flour in small portions. Then knead the dough thoroughly with your hands, gradually adding the remaining vegetable oil.
To turn fresh kefir into sour, you need to take it out of the refrigerator and leave it for 7-8 hours or overnight in a warm place.
When the pie dough becomes soft and elastic, wrap it in plastic wrap and leave for 30 minutes. Peeled potatoes, boil until soft, drain and mash. Add milk, raw egg, finely chopped dill, onions fried in butter, salt and mix.
Cut the pie dough into small balls. Roll out each ball, put the filling in the middle and form pies. Fry the pies in a pan in well-heated vegetable oil on both sides.
Fried pies with meat and rice: a recipe
Required Ingredients:
For the test:
- 800 grams of wheat flour;
- 200 milliliters of milk;
- 1 chicken egg;
- 10 grams of dry yeast;
- 1 teaspoon of granulated sugar.
For filling:
- 600 grams of boiled beef;
- 1 onion;
- 100 grams of rice;
- ground black pepper;
- salt;
- 200 milliliters of sunflower oil (for frying).
Boil rice in salted water and mix with boiled meat passed through a meat grinder. Add the onion, fried until golden brown, pepper, salt and stir.
Sift flour and mix with dry yeast. Then pour warm milk into a bowl of flour, after dissolving a teaspoon of sugar in it. Leave for 20 minutes in a warm place without stirring. When the yeast is active, add an egg, a little salt and half a teaspoon of vegetable oil.
Fried yeast dough pies are delicious both warm and cold and can be stored perfectly in the refrigerator for several days.
Stir the dough and add a little more flour if necessary. Knead the dough until it stops sticking to your hands. Cut the dough into several pieces with a sharp knife. Then each part is cut into several more identical pieces. Roll each piece into a circle. Put a tablespoon of the filling in the middle of each circle and mold the pies. Fry in hot oil until golden brown on each side.
