The Lyubimy honey cake is one of the most popular cakes in Russia. The cakes are very tender and soft, soaked in both lemon-honey impregnation and sour cream with caramel-honey condensed milk.

- - 100 g margarine
- - 3 eggs
- - 125 g granulated sugar
- - 250 ml honey
- - a pinch of salt
- - 1 tsp. soda
- - 625 g flour
- - 2 lemons
- - 400 ml of condensed milk
- - 600 g sour cream
- - 100 g butter
Instructions
Step 1
Prepare the dough. Mix eggs, granulated sugar ¸ salt, honey, soda, add margarine and mix everything well until smooth. Put on fire and heat slightly for 7-8 minutes. The mass will double in volume. Remove from heat, add flour and stir. Knead the dough, it will turn out to be liquid. Cover the dough with a dish and store in a cold place for 8-10 hours.
Step 2
Remove the dough and divide it into 8 equal portions. Cover the baking sheet with parchment paper and lay out the dough, evenly spread over the surface, 2-3 mm thick. Place in an oven preheated to 180 degrees and bake for 7-10 minutes until golden brown. Do this 7 more times. Remove from oven, cool slightly, remove paper, attach dish and cut out circles evenly. Grate the cuttings.
Step 3
Make a syrup. Squeeze juice from lemons, add 3 tablespoons to it. honey and 3 tbsp. granulated sugar and put on low heat, bring to a boil and boil for another 10-12 minutes. Remove from heat, cool slightly. Saturate the cakes with syrup.
Step 4
Prepare the cream. Mix 1 tbsp. honey, 100 g butter, condensed milk, put on low heat and bring to a boil. Remove from heat and cool. Add sour cream to the condensed milk and mix everything well.
Step 5
Liberally grease the cakes with cream and stack on a serving plate. Leave the cake for 2-3 hours. Combine the trimmings with the cream and grease the sides of the cake liberally. Place the cake in a cold place for 8-10 hours.
