These tender potato pancakes with salted or smoked fish can be served with breakfast or dinner. It is also a great appetizer for a festive table. Pancakes are prepared in 45 minutes.
It is necessary
- - 500 g of potatoes;
- - 3 tbsp. tablespoons of flour;
- - 1 onion;
- - 1 egg;
- - vegetable oil, pepper, salt.
- For filling:
- - 250 g of curd or cream cheese;
- - 200 g smoked salmon;
- - green onions.
Instructions
Step 1
Peel raw potatoes, grate them. It is better to take yellow potatoes for pancakes, they are more starchy. Squeeze the shabby potatoes well, stir them and squeeze out the excess juice again, otherwise your pancakes will turn out to be greasy and moist.
Step 2
Peel the onion, cut it very finely, add to the potatoes (in this case, onions prevent the ready-made pancakes from darkening quickly), pour in a slightly beaten raw egg, add flour with pepper and salt. Mix everything well - the potato pancake dough is ready.
Step 3
Pour oil into a frying pan, heat it, lay out the pancakes with a spoon, fry on one side for a couple of minutes until a crust forms, then turn over to the other side, fry until crisp. Put the finished pancakes on paper napkins to drain the excess fat. The resulting dough should make about 25 pancakes.
Step 4
Put a small portion of cheese on top of each pancake (you can replace it with thick sour cream), put a piece of smoked salmon. You can additionally decorate the top with green onion feathers. Potato pancakes with smoked salmon are ready, you can serve them.
