A cake is called light, which mainly consists of various types of soufflé and a biscuit cake, which is the basis of this culinary masterpiece. The cake is very tender, the chocolate sponge cake is moist, and the soufflé literally melts in your mouth. It is easy to prepare it, but it will take quite a long time - for the cake to cool and the soufflé harden.

- Dough:
- flour (1 tbsp.);
- granulated sugar (1 tbsp.);
- margarine (130 g);
- eggs (3 pcs.);
- cocoa (3 tablespoons);
- soda (1/3 tsp).
- Souffle:
- proteins from eggs (3 pcs.);
- granulated sugar (250 g);
- gelatin (15 g);
- water (75 ml);
- cottage cheese (250 g);
- butter (50 g);
- vanillin (1 sachet).
- For decoration:
- fruits.
Instructions
Step 1
Sift flour and combine with softened margarine.
Step 2
Use a mixer to beat the eggs and sugar. Beat the whites first, and then gradually add the yolks.
Step 3
Combine margarine with flour with beaten eggs, add soda quenched with vinegar and cocoa powder.
Step 4
Knead the dough. Place it in a greased baking dish.
Step 5
Bake in the oven. It is advisable not to slam the oven door. Better look through glass. As soon as the crust is browned, you can turn it off. Allow time for the baked goods to cool.
Step 6
Soak a bag of gelatin in half a glass of cold boiled water and leave to swell for one hour. Pour two hundred grams of sugar intended for soufflé into the swollen gelatin.
Step 7
Place in a water bath and, stirring constantly, bring to a boil. Boil over low heat.
Step 8
Pour the remaining sugar into the whites and beat well. As soon as the proteins become fluffy, they need to be brewed with cooked hot syrup.
Step 9
Pound cottage cheese with vanilla until a fluffy mass and mix very gently with the brewed proteins.
Step 10
Put the resulting mass on the baked and cooled crust and chill in the refrigerator for forty minutes. You can decorate the top of the cake with fresh fruit.
