Botvinya is a dish of Russian cuisine. This is a cold soup made with sour kvass, which is made from sorrel, spinach, green onions, and nettles. Serve botvinya with fish or seafood. I propose to cook spinach and greens botvinya with the addition of squid. The dish is very tasty, healthy and summer.

- - bread kvass - 1 l;
- - squids - 400 g;
- - spinach - 50 g;
- - sorrel - 50 g;
- - green onions - 25 g;
- - cucumbers - 2 pcs.;
- - lemon - 1 pc.;
- - salt - 0.5 tsp;
- - sugar - a pinch;
- - ground white pepper - a pinch.
Instructions
Step 1
Rinse the spinach and sorrel leaves. Cover the leaves with water, salt and simmer for 5 minutes. Then remove the leaves, rinse with cold water and cool. Grind the spinach and sorrel with a blender until puree.
Step 2
Put spinach and sorrel puree in kvass, salt, add pepper and sugar.

Peel the squid under hot water, remove the insides. Boil the squid in hot water for 2-3 minutes. Cool it down. Cut the finished squid into thin strips.
Step 4
Rinse cucumbers with water, cut into small cubes. Finely chop the greens, pour with lemon juice, salt, mix.
Step 5
Put greens, some cucumbers and squid in a portioned plate, fill with kvass, garnish with lemon wedges. The dish is ready.
