A very dietary soup that is suitable for fasting days. The set of products is ordinary, but vegetable cream soup with orange juice can become one of the favorites for many. The addition of zest and orange juice makes the dish taste amazing.
It is necessary
- - 2 boiled beets;
- - 2 large carrots;
- - 2 onions;
- - 4 tomatoes in their own juice;
- - 1 orange;
- - 1 liter of water;
- - 4 tbsp. tablespoons of olive oil.
Instructions
Step 1
Boil the beets in advance, cool, peel. Peel the carrots and onions too, cut into large pieces together with the beets. Pour 4 tablespoons of olive oil into a saucepan, send the carrots there. Cook for 5 minutes over medium heat, covered. Then add the onion, cover, cook for another 5 minutes. Add the beets, stir, cook for 5 minutes.
Step 2
Peel canned tomatoes. Send to a saucepan, stir, simmer for 5 minutes. Pour in a liter of water, cook for 25 minutes, sometimes stirring the contents of the pan.
Step 3
Remove the zest from half of the orange, cut into thin strips. Squeeze 100 ml of juice from the pulp. After boiling for 25 minutes, add orange juice to a saucepan, bring to a boil, remove from heat.
Step 4
Let the soup cool slightly, beat with a blender until puree. Vegetable cream soup with orange juice is ready, pour it into bowls, top with orange zest. This first course can be supplemented with cream or sour cream, but without additives it is very tasty, light, with a pleasant orange aroma. Additionally, you can decorate with whole sprigs of fresh herbs.
