I want to share an interesting recipe for a spicy French puree soup. It is made from pumpkin in chicken broth. In addition, fresh orange juice and many different spices are added to the soup, due to this, the dish turns out to be aromatic, its taste is very rich.
It is necessary
- - 300 g of peeled pumpkin;
- - 600 ml of chicken broth;
- - 250 ml of fresh orange juice;
- - 80 g flour;
- - 50 ml of vegetable oil;
- - 1 onion;
- - 3 cloves of garlic;
- - brown sugar, nutmeg, cinnamon, salt, pepper.
Instructions
Step 1
Pour vegetable oil into a large skillet, heat. Peel the onion, cut into smaller pieces, fry with chopped garlic until transparent.
Step 2
Cut the pumpkin into small cubes, add to the onion, lightly fry. Add sugar, cinnamon, nutmeg, stir. Fry a couple of minutes more so that the spices "make friends" with each other.
Step 3
Add flour to the pumpkin, stir quickly so that no lumps form.
Step 4
Pour in chicken broth, bring to a boil, cook until pumpkin is tender. At the end of cooking, do not forget to salt and pepper the soup to taste.
Step 5
Pour half of the soup into a blender, make mashed potatoes, pour back into the bowl to the remaining half of the pumpkin soup.
Step 6
You can serve it warm or cold. You can rub a little orange zest on top of each soup bowl for added flavor.
