Cauliflower is undeservedly deprived of the attention of housewives. Everyone knows that this vegetable is very tasty and healthy. This winter salad will rightfully become a decoration on any table, be it a feast or a family dinner.
It is necessary
- • Cauliflower - 3 kg;
- • Fresh zucchini of white variety - 2 kg;
- • Sweet-sour apples - 1, 2 kg;
- • Carrots - 1, 3 kg;
- • Bulgarian multi-colored pepper - 1, 3 kg;
- • Garlic wedges - 14 pcs;
- • Tomato juice (it is better to use homemade) - 1.5 l;
- • Coarse salt - 75 g;
- • Table apple cider vinegar - 50 g;
- • Capsicum pepper "Armenian" - 1 pc.
Instructions
Step 1
Peel off the top green leaves of cauliflower. Cut off the stump from her and disassemble it into separate inflorescences. Wash them and transfer them to your bowl.
Step 2
Peel the carrots from the top skin, rinse and grate. Transfer to a designated bowl.
Step 3
Wash the zucchini and peel them off. Cut out the testes from them. Cut the zucchini into small cubes and put them in a bowl prepared for them.
Step 4
Wash sweet and capsicum peppers of different colors, peel off the stalk and seeds. Cut all the peppers into strips and transfer to the intended bowl.
Step 5
Peel the garlic cloves and cloves. wash them and chop them with a garlic press. Fold into your own small bowl.
Step 6
Wash the apples, peel them from the peel, tails and seeds. Grate them coarsely.
Step 7
In a prepared saucepan, collect zucchini, carrots, sweet and hot peppers, tomato juice and apples. Let the vegetables boil. Stir and add cauliflower to them. Again, let the vegetables boil and simmer over low heat for 35 minutes under a lid that fits tightly to the stewpan.
Step 8
Add vinegar and chopped garlic to vegetables. After boiling, boil the vegetable mixture in tomato juice for 15 minutes and transfer with a ladle over prepared, pre-washed, sterilized and dried half-liter jars.
Step 9
Roll up the jars with warm lids suitable for them. Turn the jars upside down on the lids. Cover with a blanket or blanket and leave the canned food in this position for a day.
Step 10
The salad can be stored along with the rest of the preparations in a ventilated, dark and cool place.
You can open jars of salad 12 days after its preparation. From the specified set of products, 6 half-liter cans will be obtained.
