It is necessary

  • For 6-8 servings:
  • - rast. oil 4 tablespoons;
  • - baked beets 2 pieces of medium size;
  • - 1 large carrot;
  • - 1 large onion;
  • - sweet peppers 2 pieces;
  • - tomatoes 2 pieces of medium size;
  • - tomato paste 2 tbsp. spoons or 200g of chopped canned tomatoes;
  • - pitted prunes 3 pieces;
  • - potatoes 3 medium pieces;
  • - white cabbage one third of a small head of cabbage;
  • - vegetable broth 1, 2 l;
  • - 4 cloves garlic;
  • - parsley;
  • - juice from half a lemon;
  • - bacon or smoked bacon 200g;
  • - sugar 1 tbsp;
  • - 2 bay leaves;
  • - salt and pepper.

Instructions

Step 1

First you need to wash, peel and prepare the vegetables. Chop the onion, grate the carrots. Cut the pepper and tomatoes into cubes. Grate beets on a coarse grater. Cut the potatoes into cubes. Chop the cabbage. If there is no ready-made vegetable broth, then you can cook it. Boil the whole onion, carrot, beet, parsley root, celery and potatoes in the right amount of water. Then strain it and start cooking borscht.

Step 2

Throw potatoes into vegetable broth and cook until tender. Take a deep frying pan and fry the onions quite a bit. Then add the shredded carrots and pepper cubes. Then add chopped bacon, fresh chopped tomatoes and tomato paste.

Step 3

Add vegetable frying to the broth with boiled potatoes. Bring to a boil and add cabbage and prunes to the soup. When the cabbage is soft, it's time to add the beets.

Step 4

Five minutes before the borscht is ready, it must be seasoned with garlic, bay leaves, lemon juice, sugar and herbs. Then remove from heat, cover and let it brew for about half an hour.
